Chocolate Gravy

Ingredients:

 2 ½ cups of granulated sugar

½ cup Hershey’s cocoa

1 can of Pet milk

1 gallon of whole milk

¼ cup butter flavor Crisco

1 stick of real butter

¾ - 1 cup self-rising flour

First, in a bowl, add about 2 1/2 cups of sugar and about 1/2 cup of Hershey's cocoa. (In my opinion, Hershey’s is the best. I do not like any other cocoa. This can easily be altered to your taste.) Mix together well.

 

Then slowly add 1 can of Pet milk. (I use the store brand, not picky on this.) Stir well so that all the cocoa and sugar and milk are dissolved together.

 

Then add about ½ gallon of whole milk. (You can add less now and more later to get the thickness you desire) Set aside till your roux is ready.

 

In a big pan... (About a 4 quart pan) add 1/4 cup butter flavored Crisco and 1 stick of real butter; melted together. Add self-rising flour (about 3/4 - 1 cup)... this is your roux. Do not brown, but do cook long enough till the flour is cooked. The consistency of this should be when you rake it to the middle of your pan, it easily spreads out again, but not runny.

 

Add the chocolate mixture and stir constantly until thick. It is important that you stir constantly. The mixture will stick to the bottom of your pan and make your gravy lumpy if you don't.

 

It will take close to 15-20 minutes of stirring. If it starts getting too thick you can add more milk, but you'll have to stir vigorously so that it doesn't get lumpy.

 

Serve over hot biscuits. YUMMY!!!!!!!!!!!!!!
