Cheesecake

CRUMB CRUST

1 ½ cups graham crackers, crushed

¼ cup sugar

1 stick butter, melted

 

CAKE

3-8oz packages cream cheese, softened

1 ½ cups sugar

â…› tsp salt

4 eggs

1 tsp vanilla

2 tsp almond extract

 

TOPPING

2 cups sour cream

¼ cup sugar

1 tsp vanilla

 

Crust: Combine crushed graham crackers, sugar, and butter. Mash in bottom of tube pan.

 

Cake: Beat cream cheese until creamy. Blend in sugar and salt and beat well. Add eggs, vanilla, and almond extract. Pour over crust. Bake at 350 for 45-50 minutes. Remove from oven and let stand for 15 minutes.

 

Topping: Mix all ingredients well and spread on top of cake. Return to oven and bake for 15 minutes at 450. Refrigerate after cake cools.

Clam Chowder

1 slice cooked bacon, crumbled, reserve grease

2 tablespoons onion

3 or 4 potatoes, chopped small

½ cup water

¼ tsp salt

¼ tsp pepper

1 cup milk

1 can baby clams

Flour

 

Sauté onion in bacon grease. Combine all ingredients and simmer until potatoes are done. Use flour to thicken.
